If you choose to remove the skin before cooking, it can be removed with a sharp knife. The skin can be left on during cooking, or removed after cooking. With the habanero, and the Pad Thai sauce we use for the noodles, some sweet is necessary to balance the heat in both.This is a matter of personal preference. Seems like a lot of sugar (and it is admittedly more than I use in almost any other sauce), but the amount you use on each plate is a fraction of the amount used in the entire recipe, so scale it all back.
